Banana Snickerdoodle Bars

Indulge in soft and fluffy banana snickerdoodle bars - a delicious fusion of banana bread and snickerdoodles.
Ingredients:
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • ¼ teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1/2 cup white sugar
  • 1/4 cup firmly packed brown sugar
  • 1/2 cup mashed ripe banana
  • 2 teaspoons vanilla extract
  • 1 tablespoon white sugar
  • 1/2 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), and line an 8x8-inch square pan with parchment paper that overhangs on all sides.
  • Combine flour, cream of tartar, baking soda, salt, 1/4 teaspoon cinnamon, and nutmeg in a bowl, whisking until well mixed.
  • In a large bowl, use an electric mixer to beat together 1/2 cup of butter, white sugar, and brown sugar until light and fluffy. Mix in banana and vanilla extract until combined. Add flour mixture and mix until dough comes together. Press dough firmly into the prepared pan using floured hands.
  • Combine 1 tablespoon of white sugar with 1/2 teaspoon of cinnamon, then evenly sprinkle the cinnamon sugar mixture over the dough.
  • Bake in the preheated oven for approximately 25 minutes, or until the center of the dough in the pan feels set when lightly touched with a finger.
  • Allow the bars to cool in the pan for 10 minutes to set, then transfer them to a wire rack to cool completely. Slice into 16 bars.
