Crispy spring roll wraps hug sweet, gooey bananas for a delectable dessert.
Ingredients:
  • 8 (21 x 21cm) frozen spring roll pastry sheets (Trangs brand)
  • 2 large ripe bananas, peeled, diced
  • Vegetable or canola oil, for frying
  • Icing sugar, to serve
Instructions:
  • Lay out the spring roll pastry sheets on a flat surface to defrost for 10 minutes. Spread 1/8 of the diced banana onto each pastry sheet to create a 2cm x 10cm rectangle, positioning it 5cm away from one edge. Fold the pastry over the banana and roll tightly to create a parcel, folding the ends in. Moisten the pastry edges with water and press to seal. Repeat the process with the rest of the pastry sheets and banana.
  • Heat oil in a wok or deep-fryer until a little pastry dropped into the oil sizzles and rises to the surface immediately. Cook banana spring rolls in 2 batches, turning once, for 2-3 minutes until golden. Drain on paper towel. Let cool briefly, then sprinkle with icing sugar before serving.
