Banana strudel

Irresistible twist on classic strudel with bananas. A crowd pleaser!
Ingredients:
  • 4 bananas, peeled, thickly sliced
  • 56.10 gm sultanas
  • 6.80 gm desiccated coconut
  • 32.00 gm brown sugar
  • 1 orange, rind finely grated, juiced
  • 1.88 gm ground cinnamon
  • 6 sheets filo pastry
  • 5.00 gm caster sugar
  • 158.40 gm low-fat vanilla custard, to serve
Instructions:
  • Start by preheating your oven to a tantalizing 190°C. Next, elegantly line a baking tray with parchment paper. Now, gracefully combine bananas, sultanas, coconut, brown sugar, orange rind, 2 tablespoons of fresh orange juice, and a dash of warming cinnamon in a beautiful bowl. Gently stir to blend all the exquisite flavors together.
  • Lay down 1 pastry sheet on a work surface. Place another pastry sheet on top. Lightly spray with oil. Repeat this process twice more with the rest of the pastry sheets and oil to create 6 layers.
  • Spread the luscious banana mixture on one long edge of the pastry, making sure to leave a 5cm border on both short ends. Carefully fold in the short ends and roll up the pastry to seal in the delicious filling. Lay the strudel seam side down on the tray.
  • Generously coat the top of the strudel with oil. Mix caster sugar and the remaining 1/4 teaspoon of cinnamon, then generously sprinkle over the strudel. Bake for 30 to 35 minutes until the pastry is crispy and golden. Allow the strudel to rest on the tray for 5 minutes, then slice and enjoy with custard.
