Banana tarte Tatin

Easy and delicious banana tarte tatin with minimal ingredients.
Ingredients:
  • 60 g unsalted butter
  • 150 g caster sugar
  • 4 large bananas
  • ¼ teaspoon ground cinnamon
  • 1 orange
  • plain flour for dusting
  • 250 g puff pastry
  • crème fraîche optional
  • vanilla ice cream optional
  • a few tablespoons desiccated coconut optional
Instructions:
  • - Preheat your oven to 180°C/350°F/gas 4. - Cube the butter and place in a deep-sided baking tray (19cm x 30cm). Melt on low heat, then stir in sugar until combined. Cook for about 5 minutes until sugar dissolves and mixture caramelizes. - Peel and halve bananas, place on top of caramel. Sprinkle with cinnamon and orange zest. - Roll out pastry on a floured surface, then place over bananas in tray. Prick pastry with a fork. - Bake in the top of the oven for 25-30 minutes until golden. - Immediately flip tarte Tatin onto a serving plate. - Serve with crème fraîche mixed with orange zest or ice cream coated in desiccated coconut.
