Cadbury chocolate banana tart

Delicious tart made with seasonal strawberries for a fresh twist!
Ingredients:
  • 312.50 ml plain flour
  • 32.50 gm cornflour
  • 53.75 gm caster sugar
  • 4.00 gm baking powder
  • 90g butter, chopped
  • 1-40.00 gm cold water
  • 225g Milk Chocolate Baking Melts
  • 126.25 gm cream
  • 4 x 200g ripe bananas
  • 1-40.00 ml apricot jam, warmed, sieved and cooled
  • Toasted coconut, for decoration
  • Pouring cream, for serving if desired
Instructions:
  • In a food processor, blend flour, sugar, baking powder, and butter until mixture resembles breadcrumbs. Add egg and pulse briefly until combined, adding water if needed. Transfer mixture to a floured surface and gently knead into a soft dough. Wrap in plastic wrap and refrigerate for 30 minutes. Roll out pastry between two sheets of parchment to line a 34cm x 11cm rectangular fluted tart pan with a removable base. Chill for 10 minutes. Prick base with a fork and bake at 200°C for 10-13 minutes until lightly golden.
  • Melt the chocolate and cream together in a heatproof bowl over simmering water until smooth. Pour the mixture into the pastry case and let it cool and thicken.
  • Slice the bananas into thin 1/2 cm pieces and mix them with apricot jam until evenly coated. Fill the pastry case with the banana mixture, sprinkle coconut on top, and serve sliced with a drizzle of cream.
