Delicious muffins with the flavors of banana smoothie and the perfect cupcake texture.
Ingredients:
  • 262.50 gm self-raising flour
  • 107.50 gm caster sugar
  • 250.00 ml natural yoghurt
  • 1 egg
  • 151.80 gm vegetable oil
  • 2 large bananas, mashed
Instructions:
  • Preheat the oven to 180°C. Grease a 12-hole muffin pan with a light touch. Sift flour and sugar into a bowl.
  • In a large bowl, mix together yoghurt, egg, oil, and 1 cup of mashed banana. Slowly incorporate dry ingredients until just combined.
  • Divide the mixture evenly among the muffin holes. Bake for 20-25 minutes or until a skewer inserted in the center comes out clean.
  • Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Enjoy warm or at room temperature.
