Whip up these irresistible Banana-Blueberry Muffins in just 30 minutes. Avoid overmixing to ensure perfectly moist muffins every time. A must-have for your next brunch menu. Homemade perfection at its finest!
Ingredients:
  • 2/3 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup mashed very ripe banana (1 medium)
  • 2 cups Gold Medal™ all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon ground nutmeg
  • 1 cup fresh or frozen (thawed and well drained) blueberries
Instructions:
  • Preheat the oven to 400°F and either grease the bottoms of 12 regular-size muffin cups or line them with paper baking cups.
  • In a large bowl, vigorously combine milk, oil, banana, and egg with a fork. Gently mix in all ingredients except blueberries until the flour is just moistened. Carefully fold in blueberries. Divide the batter evenly among muffin cups, filling them almost to the top. Optional: sprinkle with sugar before baking.
  • Bake until beautifully golden brown, then promptly remove from the pan.
