Elevate classic banana bread with ginger and almond extract, while adding a delicious twist with grated ripe pear for a moist and flavorful treat.
Ingredients:
  • 1 medium ripe pear
  • 1 cup brown sugar
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 2 medium ripe bananas, mashed
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 0.5 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon almond extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 9x5-inch loaf pan by greasing it.
  • Peel and core the pear, then grate the flesh into a bowl.
  • Cream brown sugar and butter together using an electric mixer until smooth. Incorporate eggs, mashed bananas, chopped pear, then slowly add flour mixed with baking soda. Stir in vanilla, cinnamon, ginger, and almond extract until just combined. Transfer the batter into a greased loaf pan.
  • Bake in the middle of the preheated oven until a toothpick inserted in the center comes out mostly clean, around 1 hour.
