Elevate your French toast with bananas, rum extract, pecans, and cinnamon bread for a delicious twist!
Ingredients:
  • 8 slices cinnamon bread, cut into 1/2-inch cubes (about 8 cups)
  • 8 eggs
  • 1 cup milk
  • 2 1/2 cups real maple syrup
  • 1 teaspoon rum extract
  • 6 ripe bananas, cut into 1/2-inch slices
  • 1 cup chopped pecans
Instructions:
  • 1. Grease a 13x9-inch (3-quart) baking dish with cooking spray. Add bread cubes to the dish. 2. In a large bowl, whisk together eggs, milk, and 1/2 cup of maple syrup. Pour this mixture over the bread in the baking dish. 3. Cover and refrigerate for 8 hours or overnight before baking.
  • Preheat the oven to 350°F. Bake uncovered for 35 to 40 minutes until the edges turn golden brown. Allow it to rest for 7 to 10 minutes before serving.
  • In a medium microwave-safe bowl, heat the remaining 2 cups of maple syrup uncovered on high for 1 to 2 minutes, stirring every 30 seconds until warm. Then, mix in the rum extract.
  • Evenly scatter banana slices and pecans over the bread, then generously drizzle with 1 cup of the warmed syrup mixture. Serve promptly with the extra syrup on the side.
