Indulgent banoffee pie meringue cups - perfect for party bites
Ingredients:
  • 4 shop-bought meringues broken up
  • 250 g ready-rolled shortcrust pastry
  • 100 g hazelnuts toasted and crushed
  • 3 ripe bananas sliced
  • 450 g dulce de leche toffee sauce
  • 300 ml double cream whipped
Instructions:
  • Preheat the oven to 200ºC/400ºF/gas 6. Place the unrolled pastry on a baking sheet and bake for 15 minutes until golden. Let it cool, then break into pieces. Divide the pieces among tea or coffee cups. Layer hazelnuts, banana slices, dulce de leche, cream, and meringue in the cups. Sprinkle with reserved hazelnuts before serving.
