Delicious beef and veggie-filled tortilla wraps for a satisfying meal.
Ingredients:
  • 500g lean beef mince
  • 7.50 gm barbecue seasoning
  • 127.50 gm beef stock
  • 8 large flour tortillas
  • 1 medium avocado, diced
  • 2 large tomatoes, diced
  • 1 baby cos lettuce, trimmed, shredded
Instructions:
  • In a large frying pan over medium heat, warm the oil. Add the onion and sauté for 2 to 3 minutes until softened. Increase the heat to high, add the mince, and cook for 5 minutes, using a wooden spoon to break it up until nicely browned.
  • Season generously for flavor. Cook while stirring for 1 minute or until aromatic. Incorporate stock and tomato paste. Let it come to a boil, then lower heat to simmer for 2 minutes or until slightly thickened.
  • Follow packet directions to warm tortillas. Lay out tortillas on a clean work surface. Spoon mince mixture onto each tortilla, then add avocado, tomato, and lettuce. Fold the tortillas to wrap up the filling. Enjoy your delicious filled tortillas.
