Upgrade your meal with zesty Chargrilled Cajun beef wraps.
Ingredients:
  • 1 large (about 750g) orange sweet potato (kumara), peeled, cut into batons
  • 60ml olive oil
  • 550g Beef Oyster Blade Steak
  • 7.50 gm Brand Cajun Seasoning
  • 1 corn cob, husk and silk removed
  • 1 medium red capsicum, thickly sliced
  • 1 avocado, stoned, peeled, finely chopped
  • 2 spring onions, thinly sliced
  • 1/2 small red onion, finely chopped
  • 42.00 gm lemon juice
  • 8 Original Wraps
  • 100g aioli
  • 1 oak leaf lettuce, leaves separated
Instructions:
  • Preheat your oven to 200°C. Line a baking tray with parchment paper. Arrange the kumara on the tray, drizzle with 1 tablespoon of oil, season with salt and pepper, and toss well to coat. Bake for 20 minutes or until the kumara is golden brown and tender.
  • Drizzle the beef with half of the remaining oil and sprinkle with seasoning. Preheat a barbecue grill or chargrill pan on high heat. Cook the beef for 2-3 minutes on each side for medium doneness or to your preference. Transfer the beef to a plate and let it rest for 5 minutes before serving.
  • Grill corn and capsicum until tender and charred, then cut the kernels off the cob and place them in a bowl. Chop the capsicum and add it to the bowl along with avocado, spring onion, red onion, lemon juice, and the rest of the oil. Mix everything together.
  • Slice the beef thinly. Place wraps on a clean work surface, spread evenly with aïoli, top with lettuce, beef, and corn salsa, then roll up tightly to enclose the filling.
