Barbecue chicken skewers

Fire up the grill for vibrant chicken, capsicum, and pineapple skewers.
Ingredients:
  • 1 x 225g can pineapple pieces in natural juice, strained, juice reserved
  • 41.60 gm tomato sauce
  • 21.00 gm soy sauce
  • 1 large red capsicum, halved, deseeded, cut into 2cm pieces
  • 4 shallots, ends trimmed, cut into 3cm pieces
  • 12 (about 550g) chicken tenderloins, cut into thirds crossways
  • Olive oil spray
Instructions:
  • In a bowl, mix together pineapple juice, tomato sauce, soy sauce, and garlic. Add chicken and ensure it's coated well. Cover and refrigerate for 1 hour to marinate.
  • Skewer the capsicum, shallot, pineapple, and chicken in an alternating pattern. Lightly coat with olive oil spray for a delicious touch.
  • Preheat a barbecue flat plate or a large frying pan over medium-high heat. Cook the dish, turning occasionally, for 10 minutes or until it turns a beautiful golden color. Serve and enjoy.
