Barbecued banana chillies

Spicy Mexican bean and mushroom medley.
Ingredients:
  • 150g large flat mushrooms, chopped
  • 4 banana chillies, cut in half lengthways, deseeded (see note)
  • 200g jar hot taco sauce
  • 435g can refried beans with chilli
  • 500.00 ml grated tasty cheese
Instructions:
  • Preheat the barbecue on medium heat and lightly grease the barbecue plate.
  • In a frying pan over medium heat, sauté mushrooms, onions, and garlic in oil seasoned with salt and pepper until softened, approximately 5 minutes.
  • Fill mushroom mixture into chili cavities, top with taco sauce and beans, then sprinkle with cheese.
  • Grill, cut side up, for 8 minutes until tender and warm. Enjoy alongside charred meat.
