Barbecued cherry tomato bruschetta

Try BBQ cherry tomato bruschetta with crumbled feta and basil for a light and tasty spring snack.
Ingredients:
  • 2 x 350g punnets mixed medley tomatoes
  • 1 garlic clove, crushed
  • 1 tsp thyme leaves, coarsely chopped
  • 40.00 ml balsamic vinegar
  • 12 slices sourdough bread, chargrilled
  • 150g marinated fetta
  • 62.50 ml basil leaves
Instructions:
  • Preheat a barbecue grill or chargrill pan over medium heat.
  • Skewer tomatoes and brush with a flavorful mixture of oil, garlic, and thyme.
  • Grill skewers, turning occasionally, for about 4 minutes or until tomatoes are slightly charred and starting to soften.
  • Place the skewers on a serving platter and generously drizzle with vinegar. To enjoy, simply slide the delicious ingredients onto a piece of bread, gently remove the skewer, and finish off with a sprinkle of feta and fresh basil.
