Elevate your BBQ game with this delicious lamb dish featuring nutritious pulses.
Ingredients:
  • 4 x 200g lamb backstraps
  • 2 garlic cloves, crushed
  • 800g canned lentils, rinsed and drained
  • 82.50 ml basil leaves
  • 125g tomato
  • Plain yoghurt, to serve
Instructions:
  • Preheat a lightly oiled chargrill or barbecue to high temperature. Season the lamb with salt and pepper.
  • Grill on high heat for 5 minutes per side until nicely charred for a perfect medium-rare. Allow to rest for 5 minutes before serving.
  • Heat oil in a saucepan over medium heat. Sauté garlic for 1 minute, then add lentils and cook for 3 minutes until heated through.
  • Remove the pan from the heat and fold in fragrant basil and juicy tomatoes, then season to perfection. Slice the lamb into thick pieces and serve over hearty lentils topped with a dollop of creamy yogurt.
