Delicious vegetarian burger loaded with BBQ mushrooms, onions, fresh veggies, and zesty tzatziki.
Ingredients:
  • 1 brown onion, thinly sliced
  • olive oil cooking spray
  • 8 flat mushrooms (see note)
  • 8 slices sourdough bread
  • 50g baby spinach
  • 2 ripe tomatoes, sliced
  • 125.00 ml tzatziki
Instructions:
  • Heat up a barbecue or chargrill pan over medium heat. Give the onion a light coat of oil and sprinkle with salt and pepper. Grill for 10 minutes, turning often, until tender and caramelized. Transfer to a plate and cover to maintain heat.
  • Drizzle mushrooms with oil and season generously with salt and pepper. Turn up the heat to high and sear for 2 minutes on each side, or until they reach the perfect tenderness.
  • Sear bread until each side is golden and toasted, about 1 to 2 minutes per side.
  • Lay spinach, tomato, mushrooms, onions, and a dollop of tzatziki on 4 slices of bread. Cover with remaining bread slices. Enjoy!
