Garlic mushroom burgers

Ingredients:
  • 2 cloves of garlic
  • 2 sprigs of fresh flat-leaf parsley
  • 35 g butter (at room temperature)
  • 2 large mushrooms
  • 2 burger buns or ciabatta
  • English mustard
  • 1 handful of rocket
Instructions:
  • Preheat the oven to 200ºC/gas 6 or heat up the barbecue. Grate the garlic and chop the parsley, then mix with the softened butter. Stuff the mushrooms with the butter mixture, wrap in foil, and bake for 15 minutes until soft. Split the burger buns or ciabatta, unwrap the mushrooms, and pour the juices over the bread. Spread mustard on the buns and top with a mushroom, lemon juice, and rocket.
