Golden barbecued trout with zesty lemon-chilli dressing is a show-stopping crowd favorite.
Ingredients:
  • 1.5kg piece ocean trout fillet (side), skin on, boned
  • 113.75 gm olive oil
  • 4 garlic cloves, thinly sliced
  • 42.00 gm lemon juice
  • 40.00 ml coarsely chopped capers
  • 1 long red chilli, thinly sliced
  • 125.00 ml fresh flat-leaf parsley leaves
  • lemon wedges, to serve
Instructions:
  • Brush the trout with a generous amount of oil. Preheat the barbecue on high with the hood closed, then adjust the temperature to medium. Place the trout on the barbecue skin-side up and cook for 5 to 7 minutes until golden and partially cooked. Flip the trout and continue cooking with the hood closed for around 15 minutes for a medium doneness, or to your preferred level. Transfer the cooked trout to a serving platter.
  • In a small saucepan over low heat, gently warm the remaining oil and garlic until the garlic begins to change color. Remove from heat and mix in the lemon juice, capers, and chili.
  • Drizzle trout with flavorful dressing, sprinkle with fragrant parsley leaves, and serve alongside zesty lemon wedges.
