Barbecued peaches with brown sugar glaze and ice cream

Grilled peaches with brown sugar glaze and vanilla ice cream by top chef Curtis Stone.
Ingredients:
  • 55g brown sugar
  • 40.00 gm hot water
  • 0.63 gm ground cinnamon
  • 4 ripe peaches, halved, pitted
  • 9.20 gm canola oil
  • Vanilla ice cream for serving
Instructions:
  • Preheat the barbecue for high heat and in a small bowl, combine brown sugar, hot water, and cinnamon until the sugar dissolves.
  • 1. Brush the cut sides of peach halves with oil. Grill the peaches, cut side down, for approximately 3 minutes, until char marks appear. Flip the peaches and brush them with a brown sugar glaze, ensuring some glaze collects in the pit indentation. Cook for an additional 3 minutes or until heated through.
  • Scoop ice cream into 4 bowls. Add warm peaches and their juices on top. Finish with a drizzle of brown sugar glaze before serving.
