Easy barbecued chicken

Enhance classic barbecue chicken with luscious caramelized peaches.
Ingredients:
  • 1 7/10 kg marinated, whole chicken
  • 32.00 gm brown sugar
  • 6 yellow peaches
  • 2 limes, juiced
Instructions:
  • Preheat a covered barbecue to medium-high heat, or an oven to 180C (160C fan). Unwrap the chicken and transfer it to a foil tray. Secure the chicken legs with string. Place the tray on the barbecue away from direct heat. Cover and cook for 1.5 hours until the chicken is tender.
  • Cover and let the dish rest for 10 minutes before slicing.
  • 1. Halve peaches, discard pits, and coat in brown sugar. Grill for 3-4 minutes per side until golden and caramelized. Spritz with lime juice and enjoy alongside chicken.
