Hoi sin chicken rice paper rolls

Easy and delicious rice paper rolls filled with barbecued chicken. Ready in minutes.
Ingredients:
  • 1 Lebanese cucumber
  • 6 spring onions
  • 6 large round rice paper wrappers*
  • 250.00 ml shredded barbecue chicken, skin removed
  • 250.00 ml shredded iceberg lettuce
  • 43.20 gm hoi sin sauce
Instructions:
  • Slice the cucumber and spring onions into thin 5mm strips.
  • Prepare a shallow bowl with warm water. Submerge a rice paper sheet in the water for 30 seconds. Shake gently to remove excess water. Transfer the rice paper to a flat surface. Add 1-2 tablespoons of chicken on the edge closest to you, followed by a strip of cucumber and spring onion.
  • Sprinkle some shredded lettuce on top and generously drizzle with flavorful hoi sin sauce. Next, fold the sides of the rice paper sheet in, then tightly roll up to seal the delicious filling inside. Repeat this process with the rest of the rice paper sheets and filling ingredients.
  • Store the rolls in an airtight container with dampened paper towels on top to retain moisture. Chill until serving.
  • Offer rice paper rolls with additional hoi sin sauce on the side for dipping, if preferred.
