Try my mouthwatering spicy broccoli fried rice with hoisin BBQ chicken skewers - a family favorite!
Ingredients:
  • 200.00 gm brand long grain rice, rinsed, drained
  • 3 cloves garlic, finely chopped
  • 1 small bird's eye chilli, finely chopped
  • 125g carrot
  • 200g broccoli, cut into florets with some stem intact, stalks peeled and diced
  • 1/2 bunch buk choy, trimmed, coarsely chopped
  • 3 spring onions, thinly sliced, diagonally
  • 52.50 gm soy sauce
  • 400g chicken thigh fillets, each cut into 3 pieces
  • 43.20 gm hoisin sauce
  • 20g ginger
  • 9.20 gm olive oil
Instructions:
  • In a small saucepan, combine rice, 1 1/2 cups water, and a pinch of salt. Bring to a boil over high heat. Reduce heat, cover, and simmer for 15 minutes until water is absorbed and rice is tender. Avoid stirring to prevent sticking. Fluff with a fork and let sit for 5 minutes. Transfer to a baking sheet to cool to room temperature. Refrigerate until cold or use a rice cooker for convenience.
  • Preheat the barbecue to high heat. Combine chicken, hoisin sauce, ginger, and oil in a large bowl until well coated. Thread the chicken onto 12 bamboo skewers, then wrap the exposed parts of the skewers with foil to prevent burning.
  • Grill skewers on barbecue, rotating regularly, for 8 minutes, or until chicken is fully cooked and beautifully charred.
  • To prepare the stir-fried rice, heat a large wok or frying pan over medium-high heat. Coat the cooking surface with oil. When the oil is hot, add the rice and cook until slightly crispy, about 4 minutes. Mix in garlic and chili, then add carrot, broccoli, and bok choy. Stir for 3 minutes until vegetables soften. Incorporate spring onions and heat through for 2 minutes. Lastly, add soy sauce and stir for about 1 minute.
  • Plate the rice evenly on 4 plates. Arrange the chicken skewers on top, generously drizzle the chicken juices over them, and serve immediately.
