Ingredients:
  • 400g (2 cups) white rice
  • 60mls (1/4 cup) peanut oil
  • 50g (1/3 cup) unsalted roasted peanuts
  • 600g chicken tenderloins, cut into 2cm x loom strips
  • 2 green shallots, diagonally sliced
  • 60mls (1/4 cup) water
  • 60mls (1/4 cup) hoi sin sauce (Changs brand)
  • 1 bunch baby bok choy, trimmed, washed
Instructions:
  • Prepare perfectly cooked rice by simmering it in a generously salted pot of boiling water following the instructions on the package until it reaches the desired tenderness, approximately 12-15 minutes. Drain excess water before proceeding.
  • Heat 1 tablespoon of peanut oil in a wok or large frying pan over medium-high heat. Stir peanuts until golden, about 1-2 minutes. Drain on paper towel.
  • Drizzle another 1 tablespoon of peanut oil into the wok or pan and heat. Sear half of the chicken by stirring for 2-3 minutes until sealed. Set aside and repeat with the rest of the oil and chicken.
  • Sauté green shallots and garlic in the wok for 30 seconds. Add chicken, water, and hoi sin sauce, stir for 1-2 minutes. Toss in bok choy, stir until wilted. Sprinkle with peanuts, serve over rice.
