BBQ Pork Skewers: Juicy, glazed, and perfect for summer entertaining!
Ingredients:
  • 1 (2 pound) pork shoulder
  • 0.25 cup grated onion
  • 1 large clove garlic, finely grated
  • 1 tablespoon light brown sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon cayenne pepper
  • metal skewers as needed
  • 0.5 cup prepared barbecue sauce
Instructions:
  • Cut the pork shoulder in half lengthwise, then slice each half into 1/8-inch-thick slices.
  • Place the pork in a mixing bowl and combine with onion, garlic, brown sugar, salt, pepper, paprika, cumin, and cayenne by hand until well mixed. Cover the bowl with plastic wrap and refrigerate for 4 to 8 hours.
  • Prepare the charcoal grill by preheating it to medium-high heat and lightly oiling the grate.
  • Thread the pork slices onto metal skewers, folding longer pieces in half if necessary to ensure a snug fit.
  • Grill skewers until they are golden brown and fully cooked, turning regularly for about 30 minutes. Coat with barbecue sauce, grill for an additional 10 minutes until the sauce caramelizes, and ensure the temperature reaches 160°F (71°C) with an instant-read thermometer.
