Glazed pork skewers with stir-fried vegetables

Irresistibly sweet pork skewers.
Ingredients:
  • 82.50 gm orange marmalade
  • 21.00 gm soy sauce
  • 20.00 ml white vinegar
  • 600g Pork Fillet, thinly sliced
  • 200g green beans, trimmed, sliced length ways
  • 2 red capsicums, thinly sliced
  • 1 bunch gai lan (Chinese broccoli)
  • 4 spring onions, thinly sliced
  • 24.40 gm oyster sauce
  • 1/2 tsp sesame oil
  • 62.50 ml coriander sprigs
  • Steamed low-GI brown rice, to serve
Instructions:
  • Combine marmalade, soy sauce, and vinegar in a small saucepan. Heat over low heat until smooth and bring to a boil. Simmer for 2 minutes or until slightly thickened. Allow to cool.
  • 1. Preheat barbecue grill or chargrill to high heat. Skewer pork on soaked bamboo sticks. Brush with half of the glaze. Grill for 2-3 minutes per side, brushing with remaining glaze once, until fully cooked.
  • Lightly spray a hot wok with oil. Stir-fry beans, capsicum, and gai lan until tender, about 2-3 minutes. Add spring onion, oyster sauce, and sesame oil. Stir-fry until heated through.
  • Enhance pork skewers with a fragrant coriander sprinkle. Accompany with a colorful array of vegetables and fluffy rice.
