Barbecued potatoes

Simplify and enhance your meal with a healthy and delicious mix of potatoes and sweet potatoes.
Ingredients:
  • 1kg (about 4 large) desiree potatoes, cut into 3cm chunks
  • 1kg (about 2 medium) orange sweet potato (kumara), peeled, cut into 3cm chunks
  • 100ml olive oil
  • Sea salt & freshly ground black pepper
Instructions:
  • In a large saucepan, submerge the potatoes and sweet potatoes in cold water. Bring to a boil, then drain in a colander, being careful not to break them. Let cool for 15 minutes until reaching room temperature.
  • Grease and preheat a barbecue plate with 1 tablespoon of oil on high heat. Place potatoes and sweet potatoes on the grill, drizzle with the remaining oil, and season with salt and pepper. Cook for 12-15 minutes, tossing occasionally, until golden and tender. Transfer to a serving bowl and enjoy warm.
