Elevate grilled beef with zesty lime-infused sauce.
Ingredients:
  • 4 (about 900g) beef blade steaks
  • Olive oil spray
  • 1 x 400g can butter beans, rinsed, drained
  • 1-2 garlic cloves, peeled
  • 36.40 gm olive oil
  • 48.00 gm tahini (sesame seed paste)
  • 40.00 ml lemon thyme leaves
  • 3 tsp finely grated lime rind
  • 3-84.00 gm fresh lime juice
  • 200g green beans, topped
  • 300g yellow squash, quartered
  • Lemon thyme leaves, extra, to serve
Instructions:
  • Heat the barbecue grill or chargrill to high heat. Lightly coat the beef with olive oil spray. Grill for 3-4 minutes on each side for medium doneness or to your preference. Let it rest covered for 5 minutes before serving.
  • Combine butter beans, garlic, olive oil, tahini, lemon thyme, and lime zest in a food processor. Pulse until finely chopped. Add lime juice and blend until creamy. Season with salt and pepper to taste.
  • Steam the green beans and squash in a basket over simmering water for 4-5 minutes, ensuring the water doesn't touch the steamer, until tender.
  • Place the beef on individual serving plates, spoon over a generous portion of butter bean mixture, sprinkle with additional lemon thyme leaves, and serve alongside steamed beans and squash.
