Savor fall flavors with juicy BBQ steak and spicy arugula.
Ingredients:
  • 100g baby rocket leaves
  • 1 small red onion, halved, thinly sliced
  • 200g grape tomatoes, halved lengthways
  • 17.70 gm wholegrain mustard
  • 27.30 gm olive oil
  • 4 x 200g scotch fillet steaks, trimmed
  • 2 lemons, halved
  • 20cm Turkish bread, split
  • 20.00 ml balsamic vinegar
Instructions:
  • Heat up the barbecue grill until it reaches medium-high heat. In a large bowl, mix together the rocket, onion, and tomatoes until well combined.
  • Mix 2 teaspoons of mustard with olive oil, salt, and pepper in a small bowl. Coat both sides of the steaks with the oil mixture. Grill the steaks for 3 to 4 minutes per side for a medium doneness or until cooked as desired. Place the steaks on a plate, cover, and let them rest for 5 minutes. Grill the cut sides of lemons for 1 minute, then transfer to a plate. Grill the bread cut side down for 1 to 2 minutes until golden.
  • In a screw-top jar, mix together extra virgin olive oil, vinegar, 1 teaspoon of mustard, salt, and pepper. Shake vigorously. Drizzle dressing over rocket salad and gently mix. Place steaks on plates, top with rocket salad, and serve with barbecued lemons and Turkish bread.
