Barbecued T-bone with whipped gorgonzola butter

Delicious and easy T-bone steak meal with cheesy sauce and veggie chips.
Ingredients:
  • Salad leaves, to serve
  • 20.00 ml lemon zest
  • 30.00 ml fresh thyme leaves
  • 56.88 gm extra virgin olive oil
  • 2 x 600g beef T-bone steaks
  • 1 whole garlic bulb
  • 100g butter, softened
  • 60g gorgonzola cheese, crumbled
  • Vegetable chips, to serve
Instructions:
  • In a large glass or ceramic dish, mix lemon zest, 1 tablespoon of thyme, and 2 tablespoons of oil. Add steaks and coat them with the mixture. Cover and refrigerate for 2 hours to enhance flavors.
  • Preheat your oven to 220°C (200°C fan-forced).
  • On a piece of foil, lay out the garlic cloves. Drizzle them with the leftover oil. Fold the edges of the foil together and twist at the top to seal completely. Roast the garlic for 20 minutes or until soft. Let it cool completely before using.
  • Remove the garlic from its skins into a medium bowl. Add butter and gorgonzola, then mix well using a wooden spoon. Stir in the rest of the thyme and season with salt and pepper. Transfer to a small serving bowl.
  • Preheat a greased barbecue hotplate or chargrill over medium-high heat. Grill steaks for 7 to 8 minutes per side for a perfect medium-cooked steak. Place the steaks on a plate, loosely cover with foil, and let them rest for 10 minutes before serving.
  • Top steaks with a luscious butter mixture. Enjoy alongside crispy chips and fresh salad.
