Barbeque Ranch Meatloaf

Succulent meatloaf made with sirloin, pork sausage, and ranch dressing, served with baby carrots and fingerling potatoes.
Ingredients:
  • 1.5 pounds bulk pork sausage
  • 1 pound ground beef sirloin
  • 2 eggs, beaten
  • 1 cup dry bread crumbs
  • 0.5 cup finely chopped onion
  • 0.5 cup reduced-fat ranch dressing
  • 1 pound fingerling potatoes
  • 1 (16 ounce) package baby carrots
  • 0.25 cup barbeque sauce
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a large bowl, thoroughly combine sausage and ground sirloin. Add eggs, bread crumbs, onion, and ranch dressing; mix well. Shape the mixture into a loaf and place it in the center of a 9x13-inch baking dish.
  • Place the fingerling potatoes and baby carrots around the meatloaf, then cover the dish with foil.
  • After 1 hour of baking, remove foil and brush the meatloaf with barbecue sauce. Continue baking without foil until the meat thermometer reads at least 160°F (70°C) in the center, about 30 more minutes. Allow the meatloaf to rest for 5 to 10 minutes before slicing.
