Elevate BBQ potatoes with garlic scapes for a flavorful twist. The scapes lend a gentle garlic taste and asparagus-like texture, creating a satisfying summer side dish.
Ingredients:
  • 8 red potatoes, cut into 1-inch cubes
  • 20 garlic scapes, cut into 1 1/2-inch pieces
  • 0.25 cup extra-virgin olive oil
  • kosher salt and pepper to taste
Instructions:
  • Preheat the outdoor grill until it reaches a delicious medium-high heat, then lightly oil the grate. Next, prepare 6 18-inch pieces of aluminum foil and keep them nearby.
  • In a mixing bowl, toss together the potatoes and scapes with a drizzle of olive oil and season generously with salt and pepper. Divide the mixture among pieces of aluminum foil, then fold the edges to seal the packets before baking.
  • Place the packets on the grill over medium heat, then cover and cook until the potatoes are tender and can be easily pierced with a fork, about 20 to 25 minutes. Be sure to rotate the packets halfway through cooking for even doneness.
