Garlic, thyme and anchovy baked potatoes

Elevate ordinary potatoes into delectable baked perfection.
Ingredients:
  • 2 cloves garlic peeled and crushed
  • 4 tablespoons butter softened
  • freshly ground black pepper
  • sea salt
  • 4 baking potatoes
  • 4 anchovies or 4 rashers of higher-welfare bacon if you're not an anchovy fan
  • 1 handful fresh thyme sprigs
Instructions:
  • Mash garlic and butter together until smooth using a mortar and pestle. Season generously with pepper and lightly with salt. Cut each potato into 8 slices and spread with the garlic butter mixture. Reassemble each potato on a piece of double-thick foil, placing anchovy or bacon strips and thyme sprigs between the slices. Wrap the potatoes carefully and cook on the cooler coals of a barbecue for 1-1 ½ hours, turning occasionally, until tender. For gas grills, cook over low heat at the back for longer or start in the oven for 30 minutes before grilling.
