Barbie's Blueberry Zucchini Bread with Oatmeal and Walnuts

Moist zucchini oat bread packed with blueberries, coconut, and walnuts for a delightful treat.
Ingredients:
  • cooking spray
  • 1.25 cups vegetable oil
  • 3 eggs, lightly beaten
  • 2 cups shredded zucchini
  • 2.75 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 0.5 cup old-fashioned oats
  • 0.5 cup unsweetened shredded coconut
  • 1 pint fresh blueberries
  • 0.5 cup walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then lightly grease 2 standard loaf pans or 4 mini loaf pans with cooking spray.
  • In a large bowl, combine sugar, oil, eggs, and vanilla extract and beat until smooth. Gently fold in zucchini.
  • Combine flour, cinnamon, salt, and baking soda in a separate bowl. Mix in oats and coconut. Slowly add the flour mixture to the zucchini mixture and gently combine. Fold in blueberries and walnuts to finish the batter.
  • Spoon batter into greased loaf pans.
  • Bake in the oven until a toothpick comes out clean, approximately 50 minutes. Let cool for 20 minutes before serving.
