Classic chicken soup with tender chicken, zesty lemon, and garlic - a fan favorite!
Ingredients:
  • 8 cups water, divided
  • 3 tablespoons cornstarch
  • 0.25 cup olive oil
  • 3 tablespoons minced garlic
  • 1.5 cups sliced carrots
  • 1.5 cups sliced celery
  • 1 teaspoon salt
  • 1.5 pounds skinless, boneless chicken thighs, cut into cubes
  • 0.25 cup chicken soup base
  • 2 tablespoons rubbed sage
  • 2 teaspoons ground black pepper
  • 1 lemon, juiced
Instructions:
  • Combine 1 cup of water and cornstarch in a bowl, stirring until the cornstarch is fully dissolved.
  • In a large pot over medium heat, sauté garlic in olive oil for 1 minute. Add carrots, celery, and salt, cook until tender for 5 to 10 minutes. Then, add chicken and cook until no longer pink in the center and juices run clear, about 7 minutes. Finally, stir in 7 cups water and chicken soup base.
  • Bring the mixture to a lively boil, using a spatula to release any flavorful bits stuck to the bottom. Let it boil for 20 minutes before adding the cornstarch mix, sage, and pepper. Stir well and continue boiling for an additional 5 minutes. Finally, take it off the heat and gently stir in the lemon juice.
