Preheat your oven for simple and delicious chocolate muffins.
Ingredients:
  • 337.50 gm self-raising flour, sifted
  • 65.00 gm cocoa powder, sifted
  • 215.00 gm caster sugar
  • 142.50 gm dark chocolate bits
  • 115.00 gm vegetable oil
  • 169.95 gm milk
  • 4.40 gm vanilla extract
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and line a 12-hole muffin pan with paper cases that hold 1/3 cup each.
  • In a large bowl, mix together flour, cocoa powder, sugar, and dark chocolate bits. Create a well in the center. In a separate large jug, whisk together vegetable oil, milk, vanilla, and eggs. Pour the oil mixture into the well. Stir with a wooden spoon until just combined, being careful not to over-mix. Spoon the batter into paper cases.
  • Bake for 25 minutes or until the top springs back when touched and a skewer inserted into the center comes out clean. Let it sit in the pan for 5 minutes before transferring to a wire rack to cool. Serve.
