Basic fritter batter

Kids can create delicious fritters with their favorite fillings in the kitchen.
Ingredients:
  • 450g (3 cups) self-raising flour
  • 500ml (2 cups) milk
  • 2 eggs, lightly whisked
  • Salt & freshly ground black pepper
Instructions:
  • In a large bowl, create a well in the center of sifted flour. In a separate jug, combine milk and eggs, then slowly incorporate into the flour using a balloon whisk. Season with salt and pepper, and mix in your desired filling.
  • In a frying pan over medium-high heat, heat 2 teaspoons of oil. Add 2 tablespoons of batter to the pan, spacing them about 5cm apart. Cook for 3 minutes until golden underneath and bubbles appear. Flip and cook for another 3 minutes until cooked through. Transfer to a warm plate, cover with foil to keep warm. Repeat with remaining oil and batter in 2 more batches to make a total of 12 fritters.
