Basil and smoked trout crostini

Basil: The key to mouthwatering pesto and aromatic dishes.
Ingredients:
  • 1/2 day-old French bread stick (baguette) (see note), cut into 20 thin slices
  • 1 x 110g pkt goats cheese
  • 40.40 gm thickened cream
  • 62.50 ml chopped fresh basil
  • 2 x 200g pkts sliced smoked trout
  • Small fresh basil leaves, to serve
Instructions:
  • Preheat the oven to 170°C. Line 2 baking trays with non-stick baking paper. Arrange the bread on the trays, spray with oil, and bake for 15 minutes, turning once, until crisp. Let it cool completely.
  • Combine tangy goat cheese with rich cream and fresh chopped basil in a bowl.
  • Spread a luscious layer of tangy goat cheese mixture onto the crispy crostini, then elegantly layer with delicate trout slices and fresh basil leaves.
