Basil Cream Sauce

Indulgent basil cream sauce with pine nuts and Parmesan, perfect for pasta, salmon, or chicken.
Ingredients:
  • 2 cups fresh basil leaves
  • 4 cloves garlic, minced
  • 0.25 cup olive oil
  • 0.5 cup grated Parmesan cheese
  • 2 ounces pine nuts
  • salt and pepper to taste
  • 1 pint light cream
Instructions:
  • Prepare all the necessary ingredients.
  • Pulse fresh basil and garlic in a food processor until finely chopped.
  • While the processor is running, gradually drizzle in the oil until the mixture starts to emulsify, which should take around 40 seconds. Next, add Parmesan, pine nuts, salt, and pepper, then blend for 1 minute.
  • Simmer cream in a saucepan over gentle heat until it starts to bubble.
  • Add half of the hot cream into the food processor, then pulse for 20 seconds until blended with the basil mixture.
  • Pour the basil-cream mixture into the saucepan and combine with cream until smooth. Let it simmer until thickened, approximately 5 minutes.
