Basmati Rice Pilaf

Enhance basmati rice with flavorful chicken stock, onion, and a hint of bay leaf for a delightful pilaf.
Ingredients:
  • 1.5 cups chicken stock
  • 1 tablespoon vegetable oil
  • 0.25 cup finely diced onion
  • 1 bay leaf
  • 1 cup uncooked basmati rice
  • salt to taste
  • 1 tablespoon unsalted butter
Instructions:
  • Bring the chicken stock to a boil in a saucepan and keep it warm until needed.
  • In a 2 quart saucepan, warm vegetable oil over medium-high heat. Sauté onion and bay leaf in the fragrant oil until the onion is soft, for about 5 minutes.
  • Coat basmati rice with the flavorful onion mixture by stirring well.
  • Add hot chicken stock to the rice mixture and season with salt. Stir well.
  • Achieve a lively boil with the rice mixture, then cover and lower the heat to medium-low. Let it gently simmer until the rice is tender and has absorbed all the liquid, approximately 20 minutes.
  • Take the saucepan off the heat and remove the bay leaf. Stir in the butter and gently fluff the rice using a fork.
