Bay roasted smashed potatoes

Quick and easy smashed potatoes, roasted to perfection. Ready in just 5 minutes.
Ingredients:
  • 1 kg small waxy potatoes, such as Coliban
  • 120ml extra virgin olive oil
  • 6 fresh bay leaves, torn
Instructions:
  • Preheat the oven to 220C/200C fan forced. Place a sheet of baking paper in a roasting pan. Season the potatoes and put them in the pan. Drizzle 1 tablespoon of oil and mix thoroughly. Roast for 30 minutes.
  • - Take the pan out of the oven and smash the potatoes with a potato masher until 'smashed'. - Mix in bay leaves and the rest of the oil. Stir thoroughly and season with salt and pepper. - Put it back in the oven for another 20 minutes or until the potatoes are crispy and golden. - Serve on a platter.
