Try these delicious BBQ Meatloaf Bites - a hit with kids and grown-ups alike! Mini meatloaf bites baked in muffin tins for a fun twist on a classic dish.
Ingredients:
  • For the meatloaf bites:
  • 2 pounds lean ground beef (no more than 10% fat)
  • 1 large egg
  • 3/4 cup breadcrumbs
  • 1 small white onion, 1/2 cup diced
  • 1 stalk celery, 1/3 cup diced
  • 1 medium carrot, 1/3 cup diced
  • 1/2 green pepper, 1/3 cup diced
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • For the BBQ glaze:
  • 1 cup barbecue sauce (I like Stubbs)
  • 1/4 cup brown sugar
  • 1 tablespoon hot sauce (optional)
  • DAD ADD: "Meatball" sub (makes 1 sub)
  • 1 soft French roll
  • 2 to 3 cooked meatloaf bites
  • 2 tablespoons marinara sauce, store-bought or homemade
  • 2 ounces provolone cheese
  • Banana peppers
Instructions:
  • Preheat the oven to 350°F.
  • Prepare the meatloaf mixture: In a large bowl, mix together ground beef, egg, breadcrumbs, onion, carrot, celery, green pepper, garlic, chili powder, salt, pepper, and Worcestershire sauce until fully combined. For best results, use your hands to ensure thorough mixing.
  • Prepare the muffin tin: Cover it with foil for simple cleaning. Next, distribute the meatloaf mixture evenly among the sections. Use roughly 1/4 cup of the mixture per tin, filling each about 3/4 full. The recipe should yield around 18 tasty meatloaf bites.
  • Bake the meatloaf-filled muffin tins in the oven for approximately 20 minutes.
  • Prepare the glaze by combining barbecue sauce, brown sugar, and hot sauce (if using) in a small bowl. After baking the bites for 20 minutes, brush the glaze onto the tops of the meatloaf.
  • Continue baking the meatloaf bites in the oven for an additional 10 minutes, or until they reach an internal temperature of 160°F if using a meat thermometer.
  • To serve, gently take out the meatloaf bites after they have cooled a bit and enjoy with a side of steamed vegetables and potatoes. Ensure the meatloaf bites are intact and hold their shape.
  • Preheat the oven to 400°F. Open a soft French sub roll and spread on a generous amount of marinara sauce. Layer on provolone cheese, halved meatloaf bites, and banana peppers. Bake for 6 to 7 minutes until the edges are crispy and the cheese is melted and bubbling. Serve hot.
