Try this delicious BBQ nectarine, chicken, and asparagus salad for a simple, family-friendly meal option.
Ingredients:
  • 2 (200g each) RSPCA Approved chicken breast fillets
  • 1/2 tsp fennel seeds
  • 1/2 tsp cumin seeds
  • 1.25 gm ground paprika
  • 27.30 gm olive oil
  • 2 bunches asparagus, woody ends trimmed
  • 2 yellow nectarines, cut into wedges
  • 40.00 ml red wine vinegar
  • 5.90 gm wholegrain mustard
  • 1 bunch watercress, sprigs picked
  • 100g cherry bocconcini, coarsely torn
Instructions:
  • Preheat a barbecue grill or chargrill to medium-high heat. Place the chicken in a bowl and coat with fennel, cumin, paprika, and 2 teaspoons of oil. Season well and toss to coat evenly.
  • Grill chicken for 4 minutes on each side until fully cooked. Place on a plate, cover with foil, and let it rest for 5 minutes. Slice thinly before serving.
  • Grill the asparagus, turning occasionally, for 2 minutes until it's tender. Then, transfer the asparagus to a plate.
  • Brush nectarine with a hint of remaining oil, then grill each side for 1 minute until lightly charred.
  • In a bowl, combine the vinegar, mustard, and remaining oil. Arrange the watercress on a serving platter and top with asparagus, nectarine, chicken, and bocconcini. Finish by drizzling the dressing over the dish.
