BBQ nectarine, fetta and prosciutto salad

Grilled nectarine wedges bring juicy sweetness to a delicious salad with feta and prosciutto.
Ingredients:
  • 250.00 ml mint leaves
  • 80ml olive oil
  • 30.00 ml white wine vinegar
  • 5.90 gm Dijon mustard
  • 14.40 gm honey
  • 2 large yellow nectarines, stoned, cut into wedges
  • Olive oil, extra, to brush
  • 60g pkt Baby Rocket
  • 60g Baby French Kale
  • 100g prosciutto slices, coarsely torn
  • 100g marinated fetta
Instructions:
  • In a blender, combine half of the mint with the oil and blend until smooth. Add the vinegar, mustard, honey, and season with salt and pepper. Continue blending until a smooth and well-combined dressing is formed.
  • Preheat a barbecue grill or chargrill on high heat. Brush the nectarine with a little extra oil and season with salt and pepper. Grill for 2 minutes on each side, or until lightly charred. Transfer to a plate.
  • Place the rocket, kale, prosciutto, feta, nectarine, and remaining mint in a serving bowl, then generously drizzle with dressing.
