Elevate classic red wine vinaigrette beans for a delicious Christmas side dish with a twist!
Ingredients:
  • 750g green beans
  • 3 bunches asparagus, cut into thirds
  • 750g cherry tomatoes, halved
  • 300g baby spinach leaves, trimmed, washed and dried
  • 60ml (1/4 cup) olive oil
  • 40.00 ml red wine vinegar
  • 5.00 gm caster sugar
  • 5.90 gm wholegrain mustard
Instructions:
  • Make the vinaigrette by combining oil, vinegar, sugar, mustard, salt, and pepper in a small screw-top jar. Shake vigorously to blend.
  • 1. Bring a large saucepan of water to a boil over high heat, then add beans. Cook uncovered, stirring occasionally, for 3-4 minutes until beans are tender-crisp and vibrant green.
  • Using a slotted spoon, gently transfer the beans to a strainer and rinse under cold running water. Drain thoroughly before returning them to the boiling water.
  • Cook the asparagus for 3-4 minutes until vibrant green and tender crisp. Then, quickly refresh in cold water to maintain its bright color and drain well before serving.
  • In a large serving bowl, mix together beans, asparagus, tomatoes, and spinach. Drizzle vinaigrette over the salad and toss gently to coat. Serve promptly.
