Elevate any meal with a delicious Bean, Basil & Feta Salad, ideal for pairing with grilled lamb or beef.
Ingredients:
  • 56.88 gm Brand extra virgin olive oil
  • 400g green beans, ends trimmed
  • 400g can cannellini beans, rinsed, drained
  • 20.00 ml white wine vinegar
  • 1 bunch basil, leaves picked
  • 5.90 gm wholegrain mustard
  • Freshly ground black pepper
Instructions:
  • Quickly blanch green beans in boiling water for 1-2 mins until vibrant. Refresh in cold water, then transfer to a platter. Sprinkle with cannellini beans and fresh basil before adding a generous sprinkle of feta on top.
  • Combine dressing ingredients and generously drizzle over salad before serving. Season with salt and freshly ground black pepper to taste.
