Indulge in a quick and comforting bean and bacon dip. Ready in just 30 minutes!
Ingredients:
  • 8 slices bacon
  • 1 can (16 oz) Old El Paso™ Traditional Refried Beans
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles, drained
  • 1 cup frozen corn, thawed, drained
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1 jar (16 oz) thick & chunky salsa
  • 1 1/2 cups shredded Mexican cheese blend (6 oz)
  • Sour cream, if desired
  • Tortilla chips
Instructions:
  • Crisp up the bacon until it's golden and delicious, then let it rest on paper towels. Save 2 slices of bacon whole; crumble the rest of the 6 slices.
  • Prepare a 2-quart microwavable dish by spraying it with cooking spray. In a medium bowl, combine refried beans, green chiles, and crumbled bacon. Spread this mixture evenly in the dish. Layer frozen corn and black beans on top, followed by pouring salsa over the mixture. Sprinkle cheese over the salsa, then crumble the remaining 2 slices of bacon and sprinkle them over the cheese.
  • Microwave on High without covering for 10 to 15 minutes until the cheese is bubbly and the mixture is heated through. Top with dollops of sour cream. Enjoy the warm dip with tortilla chips.
