Elevate game day with crispy air fryer tortilla chips paired with a decadent cheesy pinto bean and bacon dip.
Ingredients:
  • avocado oil cooking spray
  • 0.5 pound bacon
  • 0.5 cup chopped onion
  • 1 (4 ounce) can chopped green chiles (such as Ortega®)
  • 1 (29 ounce) can pinto beans, undrained
  • 0.5 cup chicken broth
  • 1 teaspoon chili powder
  • 2 tablespoons cream cheese
  • 1 cup shredded sharp Cheddar cheese
  • 1 cup shredded pepper Jack cheese
  • 12 (6 inch) corn tortillas
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish.
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally until crispy and browned, about 10 minutes. Remove and drain on paper towels, then crumble once cooled.
  • - Cook onion in the skillet until translucent, about 4 to 5 minutes. Then, add green chiles and garlic and cook for an additional 2 minutes. - Pour in pinto beans and bring to a boil. Mix in chicken broth and chili powder. Reduce heat and mash beans until slightly thickened, about 5 to 6 minutes. - Add cream cheese and stir until melted. Simmer until slightly thickened, another 5 to 6 minutes. Stir in bacon until well combined. Season with salt and pepper to taste.
  • Create a delicious double layer by spreading half of the bean mixture, followed by 1/2 cup of Pepper Jack and 1/2 cup of Cheddar cheese in the baking dish. Repeat the layers for ultimate flavor!
  • Bake covered in the preheated oven for 15 minutes, then uncover and bake for an additional 5 to 7 minutes until the cheese is melted or lightly browned.
  • Preheat the air fryer to 350 degrees F (175 degrees C) following the manufacturer's guidelines.
  • - Cut each tortilla into quarters. - Drizzle avocado oil over the tortilla quarters and coat evenly. - Arrange the tortilla pieces in a single layer in the air fryer basket. - Air fry for 4-6 minutes until golden. - Flip the tortillas and air fry for an additional 2-3 minutes until crispy. - Keep a close eye on them to prevent burning. - Season with salt and serve alongside a hot dip.
