Beans with almond dukkah

Boil beans, top with crunchy nuts for a flavorful, textured side dish.
Ingredients:
  • 100g Turkish bread, torn into 2cm pieces
  • 500g green round beans, trimmed
  • 2 tsp finely grated orange rind
  • 9.20 gm extra virgin olive oil
  • 60g (1/3 cup) blanched almonds
  • 24.00 gm sesame seeds
  • 2 tsp ground coriander
  • 5.00 gm ground cumin
Instructions:
  • Preheat the oven to 200ºC. Place the bread on a baking tray and bake until light golden, about 10 minutes. Let it cool slightly, then break it into small pieces.
  • For the almond dukkah, toast almonds in a large frying pan over medium heat for 2-3 minutes until lightly toasted, then transfer to a bowl. Toast sesame seeds in the same pan for 2 minutes until lightly toasted, add coriander and cumin, stir for 30 seconds until aromatic, then transfer to the bowl. Finely chop the almonds and mix into the sesame mixture. Season with salt and pepper.
  • Blanch the beans in a pot of salted boiling water for 2-3 minutes until vibrant green and tender-crisp, then drain.
  • Combine bread, orange rind, 2 tablespoons of dukkah, salt, pepper, and oil in a bowl. Mix well.
  • Arrange the beans on a beautiful platter and generously top them with the flavorful bread mixture.
