Green beans with almond and lemon dressing

Tangy lemon dressing elevates this vibrant green bean and almond dish.
Ingredients:
  • 40g (1/4 cup) slivered almonds
  • 1/5 tsp finely grated lemon rind
  • 42.00 gm fresh lemon juice
  • 18.20 gm olive oil
  • Freshly ground black pepper
  • 1kg green beans, topped
  • Poached trout with mustard & caper dressing, to serve
Instructions:
  • In a medium frying pan over medium heat, toast the almonds by stirring for 1-2 minutes until lightly golden. Finish by transferring them to a bowl.
  • Combine the zesty lemon rind, fresh lemon juice, and oil in a small jug. Don't forget to season with pepper to enhance the flavors.
  • Blanch the beans in a pot of boiling salted water for 1-2 minutes until vibrant green and crisp-tender. Drain thoroughly.
  • Plate the beans, sprinkle with toasted almonds, drizzle with lemon dressing, and serve alongside the poached trout with mustard & caper dressing.
